⁠ This recipe is for 4 but can be doubled.⁠⠀
Easy Seafood Chowder⁠
1 leek⁠⠀
1/2 onion⁠⠀
1 carrot⁠⠀
1 stick of celery⁠⠀
50g butter⁠⠀
1/4t fennel seeds⁠⠀
3T flour⁠⠀
2c fish stock⁠⠀
3/4c milk⁠⠀
1/4 cream⁠⠀
250g white flesh fish (I used tarakihi)⁠⠀
5-6 large mussels⁠⠀
2T Italian parsley⁠⠀
2T dill⁠⠀
Salt & white pepper to taste⁠⠀
In a pot on medium heat add finely chopped leek, onion, celery and carrot sweat down with the butter and fennel seeds for 10mins. Heat your stock, milk and cream in this time.⁠⠀
Once the vegetables are soft add in your flour, stirring for another 2 minutes.⁠⠀
Slowly whisk in your stock mixture, stir for 5mins then add in your seafood, stirring for 10mins.⁠⠀
Stir in your herbs and season to taste.⁠⠀
Serve with lemon and some yummy bread. Enjoy⁠⠀
